  • 3 very ripe bananas mashed
  • 2 cups self-rising flour
  • 1/2 cup sugar
  • 2 large eggs beaten

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add the eggs and sugar, then mix until well combined.
  4. Gently fold in the self-rising flour until just combined. Do not overmix.
  5. Pour the batter into the greased loaf pan and smooth the top.
  6. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
