  • 4 medium Russet potatoes peeled and chopped
  • 1 small Onion diced
  • 2 tablespoons Butter
  • 4 cups Broth or Water

Instructions
 

  • Peel and chop the potatoes into small, even-sized pieces. Dice the onion finely.
  • In a large pot, melt the butter over medium heat. Add the diced onion and cook until soft and translucent.
  • Add the chopped potatoes to the pot and stir to coat them in the butter and onions.
  • Pour in the broth or water, bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until potatoes are fork-tender.
  • Mash the potatoes with a potato masher for a chunky soup or use an immersion blender for a smooth consistency.
  • Adjust seasoning with salt and pepper to taste. Serve hot and enjoy!

Notes

For extra creaminess, add a splash of milk or cream before serving. Garnish with shredded cheese, croutons, or fresh herbs for additional flavor.
