  • 4 medium Russet potatoes peeled and chopped
  • 1 small Onion diced
  • 2 tablespoons Butter
  • 4 cups Broth or Water

Method
 

  1. Peel and chop the potatoes into small, even-sized pieces. Dice the onion finely.
  2. In a large pot, melt the butter over medium heat. Add the diced onion and cook until soft and translucent.
  3. Add the chopped potatoes to the pot and stir to coat them in the butter and onions.
  4. Pour in the broth or water, bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until potatoes are fork-tender.
  5. Mash the potatoes with a potato masher for a chunky soup or use an immersion blender for a smooth consistency.
  6. Adjust seasoning with salt and pepper to taste. Serve hot and enjoy!

Notes

For extra creaminess, add a splash of milk or cream before serving. Garnish with shredded cheese, croutons, or fresh herbs for additional flavor.
