Preparation
- Preheat your air fryer to 375°F (190°C).
- Wash the head of cauliflower thoroughly and pat it completely dry using a clean kitchen towel or paper towels. This step is crucial for crispy results. Cut the cauliflower into uniform 1-inch florets.
Seasoning
- In a large mixing bowl, combine the dried cauliflower florets, olive oil, lemon pepper seasoning, garlic powder, and salt. Toss vigorously to ensure every floret is evenly coated. If using, add the fresh lemon zest and toss again.
Air Frying
- Arrange the seasoned cauliflower in a single layer in the air fryer basket. Avoid overcrowding the basket, as this can steam the cauliflower instead of crisping it. You may need to cook in two batches, depending on the size of your air fryer.
- Air fry for 18-22 minutes, shaking the basket halfway through (around the 10-12 minute mark). Continue to cook until the cauliflower is tender-crisp, lightly browned, and has a few nicely charred edges.
Finishing and Serving
- Carefully remove the air-fried lemon pepper cauliflower from the basket and transfer it to a serving dish. Garnish with fresh chopped parsley and serve immediately with fresh lemon wedges on the side, if desired.
Notes
For oven baking: Spread the seasoned cauliflower on a single layer on a large baking sheet. Roast in a preheated oven at 400°F (200°C) for 25-30 minutes, flipping halfway through, until tender and lightly caramelized. Always ensure your cauliflower is very dry before seasoning to achieve the best crispy texture.
