Prep the Wings
- Pat the wings completely dry with paper towels - this is crucial for crispiness. In a large bowl, toss the wings with baking powder, salt, garlic powder, and black pepper until evenly coated. The baking powder helps draw moisture to the surface and creates that crackling skin.
- Preheat your air fryer to 400°F. Arrange the wings in a single layer with space between them; work in batches if needed. Cook for 22-25 minutes, flipping halfway through, until deeply golden and the internal temperature reaches 165°F. The skin should sound hollow when tapped.
Make the Buffalo Sauce
- While the wings cook, melt the butter in a small saucepan over medium heat. Remove from heat and whisk in the hot sauce and honey until smooth and glossy. Keep warm until ready to toss.
- Transfer the hot wings to a clean bowl, pour the sauce over them, and toss vigorously until every wing is coated. Serve immediately with celery sticks and blue cheese dressing on the side.
Notes
