Air Fryer Chickpeas

Ingredients

  • 1 can canned chickpeas 15 oz, drained and rinsed
  • 1.5 tbsp olive oil
  • 0.5 tsp fine sea salt plus more to taste
  • 0.5 tsp smoked paprika
  • 0.25 tsp ground cumin
  • 0.25 tsp garlic powder
  • 1 pinch cayenne pepper optional, for heat

Method
 

Prep
  1. Drain and rinse the chickpeas, then spread them on a clean kitchen towel. Pat completely dry, rubbing gently to remove any loose skins. The drier they are, the crispier they get. Discard any skins that come off.
  2. Toss the dried chickpeas in a bowl with olive oil, salt, smoked paprika, cumin, garlic powder, and cayenne if using. Stir until every chickpea is coated evenly.
Air Fry
  1. Preheat your air fryer to 390F if your model requires preheating. Spread chickpeas in a single layer in the basket. Air fry for 12 minutes, shaking the basket halfway through.
  2. Shake the basket again and check for crispness. Most will need 4 to 6 more minutes. Continue air frying until they are deeply golden and sound hollow when you shake the basket, about 16 to 18 minutes total. They will crisp more as they cool.
  3. Transfer to a plate and let cool for 5 minutes. Taste and add a pinch more salt if needed. Serve warm or at room temperature.

Notes

For extra crunch, remove as many chickpea skins as possible before air frying - this is the secret to shatteringly crisp results. Store completely cooled chickpeas in a loosely covered container at room temperature for up to 2 days; sealing them airtight makes them chewy. Try swapping the spices for everything bagel seasoning, curry powder, or cinnamon and sugar for a sweet version.
