Prepare Ingredients
- Preheat your air fryer to 380°F (190°C).
- Wash and cut the potatoes into approximately 1-inch cubes. Pat them very dry with paper towels to ensure crispiness.
- Cut the sirloin steak into 1-inch cubes. Pat them dry with paper towels.
Cook the Potatoes
- In a large mixing bowl, toss the cubed potatoes with 1 tablespoon olive oil, 1 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon dried Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
- Place the seasoned potatoes in a single layer in the air fryer basket (cook in batches if necessary to avoid overcrowding).
- Air fry for 15 minutes, shaking the basket halfway through. The potatoes should be fork-tender but not yet fully crispy.
Cook the Steak Bites
- While the potatoes are cooking, in the same large mixing bowl (no need to clean it), toss the steak bites with 1 tablespoon olive oil, 1 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- After the potatoes have cooked for 15 minutes, add the seasoned steak bites to the air fryer basket alongside the potatoes (or cook in a separate batch if your air fryer is small). Ensure they are in as much of a single layer as possible.
- Continue to air fry for another 8-10 minutes, shaking the basket once or twice, until the steak reaches your desired doneness and the potatoes are crispy and golden brown. For medium-rare steak, 8 minutes is usually sufficient; for medium, go closer to 10 minutes.
Garlic Butter Finish
- While the steak and potatoes finish cooking, melt the butter in a small microwave-safe bowl or saucepan. Stir in the minced garlic and optional red pepper flakes.
- Once cooked, transfer the steak and potatoes to the large mixing bowl. Pour the garlic butter mixture over them. Add the chopped fresh parsley and toss everything together until evenly coated.

Notes
For best results, do not overcrowd the air fryer basket. Cook in batches if needed, especially if your air fryer is smaller. You can keep cooked batches warm in a low oven while the rest cooks. Steak doneness varies, so adjust cooking time to your preference. An instant-read thermometer should read 130-135°F (54-57°C) for medium-rare.
