Ingredients
  

For the Salmon Bites
  • 1.5 lbs boneless, skinless salmon fillet cut into 1-inch cubes
  • 1 tbsp olive oil for air frying
  • 1 tsp salt divided
  • 0.5 tsp black pepper divided
For the Honey Garlic Marinade
  • 0.5 cup honey
  • 0.25 cup soy sauce (low sodium preferred)
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 0.5 tsp red pepper flakes (optional, for a kick)
For Garnish
  • 2 tbsp green onions sliced
  • 1 tsp sesame seeds

Method
 

  1. Pat the salmon cubes dry with paper towels. Season lightly with 1/2 tsp salt and 1/4 tsp black pepper.
  2. In a large mixing bowl, whisk together all the marinade ingredients: honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes (if using).
  3. Add the salmon cubes to the bowl with the marinade. Toss gently to ensure all pieces are coated. For best flavor, let marinate for at least 15 minutes at room temperature, or up to 30 minutes in the refrigerator.
  4. Preheat your air fryer to 375°F (190°C) for 5 minutes.
  5. Lightly grease the air fryer basket with olive oil or cooking spray.
  6. Using tongs, remove the salmon bites from the marinade, allowing excess marinade to drip off. Do not discard the remaining marinade if you wish to make a glaze.
  7. Arrange the salmon bites in a single layer in the air fryer basket, ensuring not to overcrowd it. You may need to cook in batches.
  8. Air fry for 8-10 minutes, flipping the bites halfway through, until the salmon is cooked through and slightly caramelized. The internal temperature should reach 145°F (63°C).
  9. While the salmon cooks, if desired, pour the reserved marinade into a small saucepan. Bring to a boil over medium heat, then reduce heat and simmer for 3-5 minutes, stirring occasionally, until the glaze thickens slightly. Be careful not to burn it.
  10. Once cooked, transfer the Honey Garlic Salmon Bites to a serving platter. Drizzle with the thickened glaze (if made).
  11. Garnish generously with sliced green onions and sesame seeds. Serve immediately with rice, quinoa, or a side salad.

Notes

For crispier bites, ensure not to overcrowd the air fryer basket. Cook in multiple batches if necessary. The marinating time can be extended to 30 minutes for deeper flavor, but avoid marinating raw fish for too long as it can change the texture. Store leftovers in an airtight container in the refrigerator for up to 2 days.
