Prep
- Pat the steak cubes completely dry with paper towels. This is crucial for browning. Toss in a large bowl with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated. Let sit at room temperature while you preheat the air fryer.
- Preheat your air fryer to 400°F for 3 minutes. A hot basket means better sear and less sticking.
Cook
- Working in two batches, spread steak cubes in a single layer with space between them. Crowding steams instead of sears. Cook at 400°F for 4 minutes, shake the basket or flip with tongs, then cook 2 to 4 minutes more until deeply browned and 125°F internal for medium-rare. The second batch may cook slightly faster.
- While steak cooks, stir minced garlic into the melted butter. The residual heat will mellow the raw edge without cooking it to bitterness.
- Transfer hot steak bites to a serving bowl, drizzle with garlic butter, and toss to coat. Scatter chopped parsley over top and serve immediately with toothpicks or over mashed potatoes.
Notes
Sirloin gives the best balance of flavor and tenderness for the price, but ribeye or strip work beautifully if you want to splurge. For extra crust, dust the steak very lightly with cornstarch along with the seasonings. Leftovers keep 3 days refrigerated and reheat surprisingly well in the air fryer at 375°F for 2 to 3 minutes.
