Ingredients
  

For the Cookie Bar Base
  • 1 cup unsalted butter softened (226g)
  • 3/4 cup granulated sugar (150g)
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour (300g)
  • 1/2 teaspoon salt
For the Almond Frangipane Filling
  • 1/2 cup unsalted butter softened (113g)
  • 1/2 cup granulated sugar (100g)
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 1/2 cups almond flour (150g)
  • 2 tablespoons all-purpose flour
For the Simple Syrup
  • 1/4 cup granulated sugar (50g)
  • 1/4 cup water (60ml)
  • 1/2 teaspoon almond extract
For the Topping
  • 1/2 cup sliced almonds (50g)
  • 2 tablespoons powdered sugar for dusting

Method
 

Prepare the Cookie Bar Base
  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy lifting.
  2. In a large mixing bowl, cream together the softened butter and 3/4 cup granulated sugar until light and fluffy using an electric mixer. Beat in the egg yolk and vanilla extract until well combined.
  3. In a separate bowl, whisk together the 2 1/2 cups all-purpose flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms. Do not overmix.
  4. Press the dough evenly into the prepared 9x13 inch baking pan. You can use your hands or the bottom of a glass to spread it out. Bake for 15-18 minutes, or until the edges are lightly golden. Remove from oven and set aside. Reduce oven temperature to 325°F (160°C).
Prepare the Almond Frangipane Filling
  1. While the base bakes, prepare the frangipane. In a clean mixing bowl, cream together the 1/2 cup softened butter and 1/2 cup granulated sugar until light and fluffy.
  2. Beat in the large egg and 1 teaspoon almond extract until well incorporated.
  3. Add the almond flour and 2 tablespoons all-purpose flour to the mixture. Mix on low speed until just combined and smooth.
Assemble and Bake
  1. Spread the almond frangipane filling evenly over the partially baked cookie bar base.
  2. Sprinkle the sliced almonds generously over the frangipane layer.
  3. Return the pan to the oven (now at 325°F/160°C) and bake for another 20-25 minutes, or until the frangipane is set, golden brown, and the almonds are toasted.
Prepare the Simple Syrup
  1. While the bars are baking in their second stage, combine 1/4 cup granulated sugar and 1/4 cup water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and stir in 1/2 teaspoon almond extract.
Finish the Bars
  1. As soon as the bars come out of the oven, immediately brush the warm simple syrup evenly over the entire surface of the bars. This will add moisture and a beautiful glossy finish, mimicking the syrupy goodness of a croissant.
  2. Let the Almond Croissant Cookie Bars cool completely in the pan on a wire rack before lifting them out by the parchment paper overhang. This is crucial for clean cuts.
  3. Once cooled, dust generously with powdered sugar before slicing into bars.

Notes

For best results, ensure your butter is truly softened for both the base and frangipane. It should yield to gentle pressure but not be melted. These bars store well in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week. They can also be frozen for longer storage. If you don't have almond extract, you can use vanilla extract, but the almond flavor won't be as pronounced.
