Ingredients

  • 2 thick slices Sourdough bread or other sturdy artisan bread
  • 1 tbsp Unsalted butter softened to room temperature
  • 2 tbsp Apple butter store-bought or homemade
  • 3 oz Gruyère cheese shredded or thinly sliced
  • 1/4 tsp Fresh sage finely chopped

Equipment

  • Non-stick skillet or griddle
  • Spatula

Method

  1. Lay out the two slices of sourdough bread. Evenly spread the softened butter on one side of each slice. This will be the outside of your sandwich.
  2. Flip the bread slices over (buttered-side down). On the un-buttered side of one slice, spread the apple butter in an even layer from edge to edge.
  3. Sprinkle the finely chopped fresh sage over the apple butter. Top with the shredded Gruyère cheese, ensuring it covers the entire surface.
  4. Place the second slice of bread on top, butter-side-up, to complete the sandwich.
  5. Heat a non-stick skillet or griddle over medium-low heat. Once hot, carefully place the assembled sandwich in the center of the skillet.
  6. Grill for 4-5 minutes per side, or until the bread is deep golden brown and crispy. Press down gently with a spatula occasionally to help the cheese melt evenly.
  7. Once both sides are golden and the cheese is fully melted and gooey, remove the sandwich from the skillet. Let it rest for one minute before slicing diagonally. Serve immediately.

Notes

For an extra layer of flavor and texture, add a few paper-thin slices of a crisp apple, like Honeycrisp or Granny Smith, on top of the cheese before grilling. Maintain medium-low heat to ensure the cheese melts perfectly without the bread burning. This sandwich is best enjoyed fresh off the skillet!
