- In a medium bowl, whisk together the flour, granulated sugar, and 1/2 teaspoon cinnamon. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs. Set aside.
- In a large bowl, combine the thinly sliced apples, brown sugar, 1 teaspoon cinnamon, nutmeg, and lemon juice. Toss gently to coat the apples evenly.
- In another large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the powdered sugar and vanilla extract, beating until fully incorporated. Gradually beat in the milk until the mixture is light and fluffy.
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish. Spread about one-third of the cinnamon crumble mixture evenly over the bottom of the prepared dish.
- Spoon half of the cream cheese filling over the crumble layer, spreading it gently to the edges. Arrange half of the spiced apple slices evenly over the cream cheese. Repeat with another layer of cream cheese filling, followed by the remaining apple slices.
- Finish by spooning the remaining cream cheese filling over the apples, spreading it out. Sprinkle the remaining cinnamon crumble mixture evenly over the top.
- Bake for 35-40 minutes, or until the top is golden brown and the apples are tender and bubbly.
- Let the apple lasagna cool on a wire rack for at least 30 minutes before slicing and serving. This allows the layers to set nicely.

Make-Ahead: You can assemble the lasagna a day in advance, cover it tightly, and refrigerate. Add an extra 10-15 minutes to the baking time if baking from cold. Serving Suggestion: Serve warm with a scoop of vanilla bean ice cream or a dollop of whipped cream for an extra special treat. Apple Choice: While Granny Smith offers a nice tart contrast, a mix of Granny Smith and Honeycrisp apples would provide a wonderful balance of sweet and tart flavors and good texture.
