Prepare the Marinade
- Safety First: Scotch bonnet peppers are extremely hot. It is highly recommended to wear gloves when handling them to avoid skin irritation. Remove the stems. For less heat, you can also remove the seeds and white membranes.
- Combine all marinade ingredients in a blender or food processor: scotch bonnet peppers, scallions, onion, garlic, ginger, thyme, allspice, nutmeg, cinnamon, brown sugar, soy sauce, vinegar, oil, salt, and pepper.
- Blend on high speed until the mixture forms a thick, relatively smooth paste. You may need to scrape down the sides of the blender a few times to ensure everything is incorporated.
Marinate the Chicken
- Pat the chicken pieces completely dry with paper towels. Using a sharp knife, make 2-3 shallow slashes in the thickest parts of each piece. This helps the marinade penetrate deeper into the meat.
- Place the chicken in a large non-reactive bowl or a large resealable plastic bag. Pour about three-quarters of the jerk marinade over the chicken, reserving the rest in a separate container for basting later.
- Using your gloved hands, rub the marinade all over the chicken, making sure to get it into the slashes and under the skin. Cover the bowl or seal the bag and refrigerate for at least 4 hours, but preferably overnight (up to 24 hours) for maximum flavor.
Grill the Chicken
- Prepare your grill for two-zone cooking (one side with direct heat, one side with indirect heat). For a gas grill, set one or two burners to medium-high and leave the others off. For a charcoal grill, bank the hot coals to one side. The grill temperature should be around 350-375°F (175-190°C).
- Remove the chicken from the marinade, letting any excess drip off. Place the chicken skin-side down on the hot, direct-heat side of the grill. Sear for 3-4 minutes per side, until you have nice char marks.
- Move the chicken to the cooler, indirect-heat side of the grill. Cover the grill and cook for 35-45 minutes, turning occasionally. During the first 20 minutes of cooking, you can baste the chicken with the reserved marinade. Stop basting after this point to ensure the marinade is fully cooked.
- The chicken is done when the juices run clear and an instant-read thermometer inserted into the thickest part (avoiding bone) registers 165°F (74°C).
Rest and Serve
- Transfer the cooked jerk chicken to a platter and let it rest for 5-10 minutes before serving. This allows the juices to redistribute, resulting in more tender, flavorful meat. Serve hot with your favorite sides like rice and peas or coleslaw.
Notes
**Heat Level:** The heat of this dish comes from the scotch bonnet peppers. Adjust the number of peppers to your preference. Removing the seeds and white pith will significantly reduce the heat.
**Oven Method:** If you don't have a grill, preheat your oven to 400°F (200°C). Place marinated chicken on a wire rack set over a foil-lined baking sheet. Bake for 40-50 minutes, or until the internal temperature reaches 165°F (74°C).
**Authentic Flavor:** For a more traditional smoky flavor on a charcoal grill, toss a handful of soaked pimento wood chips (or allspice berries) onto the hot coals.
**Storage:** Leftover jerk chicken can be stored in an airtight container in the refrigerator for up to 4 days.
