Ingredients
  

For the Baked Feta
  • 8 oz block feta cheese preferably Greek feta
  • 2 cups cherry tomatoes halved
  • 1/3 cup extra virgin olive oil
  • 3 cloves garlic cloves minced
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground
For the Pasta
  • 12 oz pasta penne or rigatoni
  • 1/4 cup fresh basil leaves chopped
  • 1 tbsp fresh oregano chopped, or 1 tsp dried

Equipment

  • 9x13-inch baking dish
  • Large Pot

Method
 

Prepare the Dish
  1. Preheat your oven to 400°F (200°C).
  2. Place the feta cheese block in the center of a 9x13 inch baking dish. Arrange the halved cherry tomatoes around the feta.
  3. Drizzle the olive oil over the feta and tomatoes. Sprinkle with minced garlic, red pepper flakes, salt, and black pepper.
  4. Bake for 30-35 minutes, until the feta is golden and soft, and the tomatoes have burst and are caramelized.
Cook the Pasta
  1. Meanwhile, bring a large pot of salted water to boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta cooking water before draining.
  2. Drain the pasta and set aside.
Combine and Serve
  1. Remove the baking dish from the oven and immediately add the cooked pasta to the dish.
  2. Using a large spoon or tongs, mash the feta and mix everything together until creamy. Add pasta water if needed to achieve desired consistency.
  3. Stir in fresh basil and oregano. Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately while hot.

Notes

For best results, use high-quality Greek feta cheese as it becomes creamier when baked. You can add other vegetables like bell peppers or zucchini to the baking dish. Leftovers can be stored in the refrigerator for up to 3 days and reheated with a splash of pasta water or olive oil.
