Prep and Preheat
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine the cut Yukon Gold potatoes, olive oil, garlic powder, dried oregano, kosher salt, and black pepper. Toss everything together until the potatoes are evenly coated.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet. Try not to overcrowd the pan, as this helps them get crispy. Bake for 20 minutes.
- Remove the baking sheet from the oven. Gently toss the potatoes with a spatula, then sprinkle the crumbled feta cheese evenly over the top. Return to the oven and bake for another 10-15 minutes, or until the potatoes are fork-tender and slightly golden brown, and the feta is warm and just beginning to melt.
- Carefully remove the baking sheet from the oven. Garnish with fresh chopped parsley and serve immediately. Enjoy these warm, cheesy bites!
Notes
For even crispier potatoes, make sure they are completely dry before tossing with oil and spices. Don't overcrowd the baking sheet; use two sheets if necessary.
Feel free to customize the herbs! Dill or chives would also be delicious with the feta. A squeeze of fresh lemon juice just before serving can really brighten the flavors.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or a toaster oven for best results to help crisp them up again.
