Banh Mi Turkey Burgers

Ingredients
  

For the Pickled Vegetables
  • 1 cup daikon radish julienned
  • 1 cup carrot julienned
  • 0.5 cup rice vinegar unseasoned
  • 1 tbsp granulated sugar
  • 0.5 tsp kosher salt divided
For the Turkey Burgers
  • 1.25 lb ground turkey 85% lean
  • 1.5 tbsp fish sauce
  • 3 cloves garlic minced
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp vegetable oil for cooking
For Assembly
  • 0.25 cup mayonnaise
  • 1 tbsp sriracha or more to taste
  • 4 small pieces baguette 6-inch sections, split
  • 0.5 cup cucumber thinly sliced
  • 0.5 cup fresh cilantro leaves and tender stems
  • 1 jalapeno thinly sliced, optional

Method
 

Pickle the Vegetables
  1. In a small bowl, toss daikon and carrot with 1/4 teaspoon salt. Let sit 5 minutes, then squeeze out excess moisture. Add rice vinegar, sugar, and remaining 1/4 teaspoon salt. Stir to dissolve, then set aside for at least 15 minutes. Drain before using.
Make the Burgers
  1. In a large bowl, gently combine ground turkey, fish sauce, minced garlic, and black pepper. Do not overmix. Divide into 4 equal portions and shape into patties about 3/4 inch thick. Press a slight dimple in the center of each patty to prevent puffing.
  2. Heat oil in a grill pan or outdoor grill over medium-high heat. Cook patties 4-5 minutes per side until deeply browned and internal temperature reaches 165°F. Let rest 3 minutes.
  3. While patties rest, toast the cut sides of the baguette sections until golden and crisp, about 1-2 minutes.
Assemble
  1. Stir together mayonnaise and sriracha. Spread on both cut sides of toasted baguette. Layer bottom half with drained pickled vegetables, cucumber slices, turkey patty, cilantro, and jalapeno if using. Close with top half and serve immediately.

Notes

For the juiciest burgers, do not use 99% lean turkey - the 85% lean variety has enough fat to stay moist. The pickles can be made up to 3 days ahead and stored in the refrigerator. If daikon is unavailable, substitute with additional carrot or jicama for similar crunch.
