Ingredients
  

For the Meatballs
  • 1.5 lb ground beef (80/20)
  • 0.5 cup breadcrumbs plain or Italian
  • 0.25 cup milk
  • 1 egg beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.75 tsp salt
  • 0.5 tsp black pepper freshly ground
For the BBQ Sauce
  • 2 cups barbecue sauce your favorite brand
  • 0.5 cup grape jelly
  • 1 tbsp Worcestershire sauce
  • 1 tsp hot sauce optional, for heat

Method
 

Prep and Form Meatballs
  1. In a large bowl, combine breadcrumbs and milk. Let sit 2 minutes until the breadcrumbs absorb the milk and soften. This keeps the meatballs tender, not tough.
  2. Add ground beef, beaten egg, garlic powder, onion powder, salt, and pepper to the breadcrumb mixture. Use your hands to mix gently until just combined. Do not overwork or the meatballs will be dense.
  3. Shape into 24 meatballs, about 1.5 inches across. Place on a baking sheet as you go. They do not need to be perfectly round.
  4. Heat a large skillet over medium-high heat. Working in batches, brown meatballs on 2-3 sides for 2-3 minutes total. They will not be cooked through. Transfer to a plate. This step adds crucial flavor but can be skipped if you are in a rush.
Make the sauce and slow cook
  1. In your slow cooker, whisk together barbecue sauce, grape jelly, Worcestershire sauce, and hot sauce if using. The jelly sounds odd but melts into a glossy, balanced glaze.
  2. Nestle browned meatballs into the sauce, spooning some sauce over the top. Cover and cook on low for 4 hours or high for 2 hours, until meatballs are cooked through and tender. Stir gently once halfway through if possible.
  3. Switch to warm setting and serve directly from the crockpot, or transfer to a serving dish. The sauce will thicken slightly as it sits.

Notes

The grape jelly trick is classic for a reason - it balances the vinegar and smoke in barbecue sauce without tasting sweet. Use frozen pre-made meatballs in a pinch; just add them straight to the sauce and cook on low for 3 hours. These keep warm in the crockpot for hours, making them perfect for parties. Serve over mashed potatoes, on slider buns, or with toothpicks as an appetizer.
