Beef Teriyaki Foil Packets

Ingredients
  

For the Teriyaki Sauce
  • 0.25 cup soy sauce low-sodium preferred
  • 2 tbsp mirin sweet Japanese cooking wine
  • 2 tbsp brown sugar packed
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced or grated
  • 1 tsp fresh ginger finely grated
  • 1 tsp cornstarch
For the Packets
  • 1 lb flank steak sliced thin against the grain
  • 2 cups broccoli florets cut into small 1-inch pieces
  • 1 red bell pepper sliced into thin strips
  • 1 cup carrots julienned or thinly sliced
  • 1 tbsp vegetable oil
  • 1 tbsp sesame seeds for garnish
  • 2 scallions thinly sliced, for garnish

  • Heavy-duty aluminum foil
  • Rimmed baking sheet (if baking)
  • Microplane or fine grater

Method
 

Prep
  1. In a small bowl, whisk together soy sauce, mirin, brown sugar, rice vinegar, garlic, ginger, and cornstarch until smooth. Cut four 12x18 inch sheets of heavy-duty foil. Slice the flank steak as thin as you can against the grain - this is crucial for tenderness. Prep all vegetables so they're ready to go.
Assemble the Packets
  1. Lay one foil sheet on your counter. Place one-quarter of the broccoli, bell pepper, and carrots in the center. Drizzle with a few drops of oil and a pinch of salt. Top with one-quarter of the beef slices. Spoon 2 tablespoons of teriyaki sauce over the beef. Bring the long sides of the foil together and fold down twice to seal, then fold in the ends to create a tight packet. Repeat with remaining ingredients.
Cook
  1. To grill: Place packets directly on grates over medium-high heat, close lid, and cook 12-14 minutes. To bake: Arrange on a rimmed baking sheet and bake at 425°F for 18-20 minutes. The packets should puff up and you should hear active sizzling. Carefully open one packet away from your face - the beef should be cooked through and vegetables tender-crisp.
Finish and Serve
  1. Transfer contents of each packet to a shallow bowl or plate, pouring any accumulated sauce over the top. Sprinkle with sesame seeds and scallions. Serve immediately with steamed rice if desired.

Notes

Slice flank steak while it's still partially frozen - this makes paper-thin slices much easier. No mirin? Use 2 tablespoons dry sherry plus 1 teaspoon sugar. These packets can be assembled up to 8 hours ahead and refrigerated until ready to cook.
