Ingredients
  

For the Crostini
  • 1 baguette cut into 18 (1/2-inch) slices
  • 3 tbsp extra-virgin olive oil divided
For the Toppings
  • 1.5 cups fresh blueberries
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 5 oz fresh goat cheese room temperature
  • 2 tsp fresh thyme leaves plus small sprigs for garnish
  • 1/4 tsp flaky sea salt or to taste
  • 1/4 tsp freshly cracked black pepper

Method
 

Prep
  1. Preheat oven to 400°F. Arrange baguette slices on a baking sheet and brush both sides with 2 tablespoons olive oil. Bake until golden and crisp, 8-10 minutes, flipping halfway through. Set aside to cool slightly.
  2. While bread toasts, combine blueberries, honey, balsamic vinegar, and remaining 1 tablespoon olive oil in a small saucepan over medium heat. Cook until berries burst and mixture thickens slightly, 6-8 minutes, stirring occasionally. Remove from heat and stir in thyme leaves. Let cool to warm or room temperature.
  3. Spread each toasted baguette slice with about 2 teaspoons goat cheese. Top with a spoonful of blueberry compote, allowing some berries and syrup to drizzle over the edges.
  4. Sprinkle with flaky sea salt and cracked black pepper. Garnish with thyme sprigs. Serve immediately while crostini are still crisp.

Notes

The blueberry compote can be made up to 3 days ahead and refrigerated; bring to room temperature before assembling. For a sweeter version, use aged balsamic or add a pinch of cinnamon to the compote. If your goat cheese is too firm to spread easily, microwave it for 10 seconds or mash it with a fork first.
