Make the Blueberry Simple Syrup
- In a medium saucepan, combine the 2 cups of fresh blueberries, 1 cup of granulated sugar, and 1 cup of water. Give it a good stir to mix everything together.
- Bring the mixture to a simmer over medium heat, stirring occasionally. Once it starts to simmer, reduce the heat to low and continue to cook for about 8-10 minutes, or until the blueberries have burst and the sugar has completely dissolved, creating a lovely purple syrup.
- Carefully pour the blueberry syrup through a fine-mesh sieve set over a bowl, pressing gently on the solids with the back of a spoon to extract all the liquid. Discard the blueberry pulp. Let the blueberry simple syrup cool completely to room temperature.
Assemble the Lemonade
- In a large pitcher, combine the cooled blueberry simple syrup, 1.5 cups of freshly squeezed lemon juice, and 4 cups of cold water. Stir well to combine.
- Taste the lemonade and adjust to your preference. If you like it sweeter, you can add a little more simple syrup (if you have extra, or make a small batch of plain simple syrup). If it's too tart, add a splash more cold water.
- Fill glasses with ice. Pour the blueberry lemonade over the ice and garnish with fresh blueberries and lemon slices, if desired. Enjoy immediately!
Notes
For an even chillier drink, you can make the blueberry simple syrup and let it chill in the refrigerator for at least an hour before assembling the lemonade.
Feel free to adjust the sweetness and tartness to your liking; everyone's lemons are a little different! You can also use frozen blueberries for the simple syrup – no need to thaw them first, just add them straight to the saucepan.
Turn this into a fun adult beverage by adding a shot of vodka, gin, or even a dry sparkling wine to individual servings.
