Blueberry Sauce

Ingredients
  

For the Sauce
  • 2 cups fresh blueberries rinsed and picked over
  • 0.25 cup granulated sugar adjust to taste
  • 2 tbsp water
  • 1 tbsp fresh lemon juice about half a lemon
  • 0.5 tsp lemon zest finely grated, from same lemon
  • 0.5 tsp cornstarch for thicker sauce
  • 0.5 tsp cold water to dissolve cornstarch
  • 0.25 tsp vanilla extract pure, not imitation
  • 1 pinch fine sea salt

Equipment

  • Medium saucepan
  • Wooden spoon or silicone spatula
  • Fine-mesh strainer (optional)

Method
 

Make the Sauce
  1. In a medium saucepan, combine blueberries, sugar, and 2 tablespoons water. Set over medium heat and cook, stirring occasionally, until the berries begin to burst and release their juices, about 3 to 4 minutes.
  2. Reduce heat to medium-low and simmer gently for 5 minutes, mashing some berries against the side of the pan with your spoon. The sauce should look loose and soupy with some whole berries remaining.
  3. For a thicker sauce, stir together cornstarch and cold water in a small bowl until smooth. Drizzle into the simmering sauce while stirring constantly. Cook for 1 minute until glossy and slightly thickened.
  4. Remove from heat. Stir in lemon juice, lemon zest, vanilla, and salt. Let cool for 10 minutes; the sauce will continue to thicken as it cools. Serve warm or refrigerate until chilled.

Notes

For seedless sauce, press through a fine-mesh strainer after cooking, though you'll lose some texture. The sauce keeps refrigerated for 1 week and freezes beautifully for up to 3 months. Swap in maple syrup for half the sugar for deeper flavor.
