  • 2 medium Bananas ripe, halved lengthwise
  • 1 cup Greek Yogurt plain or vanilla, unsweetened preferred
For the Crunchy Toppings
  • 1/2 cup Granola your favorite variety
  • 2 tbsp Shredded Coconut unsweetened
  • 2 tbsp Chopped Almonds or walnuts
For the Fresh Fruit & Drizzle
  • 1/2 cup Strawberries sliced
  • 1/4 cup Blueberries
  • 1/4 cup Raspberries optional
  • 2 tbsp Honey or Maple Syrup or to taste
  • 1 tsp Chia Seeds optional, for extra nutrition
  • 1 tbsp Peanut Butter optional, slightly melted for drizzling

Method
 

Prepare Toppings
  1. If desired, lightly toast the shredded coconut and chopped almonds in a dry small pan over medium-low heat for 2-3 minutes until fragrant and golden, stirring frequently. Alternatively, air fry at 300°F (150°C) for 2-3 minutes. Set aside to cool.
Assemble the Split
  1. Take two serving bowls or shallow plates. Place one banana half on each side of the bowl, mimicking a classic banana split presentation.
  2. Spoon 1/2 cup of Greek yogurt down the center between the banana halves in each bowl.
  3. Artfully arrange the sliced strawberries, blueberries, and raspberries over the yogurt.
  4. Sprinkle the toasted granola, toasted coconut, and chopped almonds generously over the fruit and yogurt.
  5. Drizzle each breakfast split with honey or maple syrup. If using, add a drizzle of slightly melted peanut butter and sprinkle with chia seeds.
