Ingredients
  

For the Sandwich
  • 1 lb cooked brisket thinly sliced, leftovers or store-bought
  • 4 sandwich buns brioche, potato, or kaiser rolls
  • 0.5 cup BBQ sauce your favorite
  • 4 slices sharp cheddar cheese or 4 oz shredded
  • 0.5 small red onion thinly sliced
  • 0.5 cup dill pickle slices
  • 2 tbsp unsalted butter melted

Method
 

Prep
  1. Gather all your ingredients. Thinly slice the red onion and set aside the dill pickle slices. If using shredded cheese, have it ready.
  2. Heat a large skillet over medium heat. Add the sliced brisket and cook, stirring occasionally, until thoroughly heated through and slightly caramelized, about 5-7 minutes. If it's a bit dry, you can add a splash of water or beef broth to help rehydrate it.
  3. Pour in the BBQ sauce, tossing to coat the brisket evenly. If using cheese, lay the slices over the brisket (or sprinkle shredded cheese) and cover the skillet for 1-2 minutes until the cheese is melted and gooey. Remove from heat.
  4. While the brisket is heating, melt the butter in a separate pan or clean the skillet. Split the sandwich buns and butter the cut sides. Place them cut-side down in the hot pan and toast until golden brown, about 2-3 minutes.
  5. Spread a generous amount of the cheesy BBQ brisket onto the bottom half of each toasted bun.
  6. Top the brisket with a few slices of red onion and a generous layer of dill pickles. Place the top half of the bun on the sandwich and serve immediately.

Notes

Brisket Choice: This recipe shines with leftover smoked brisket, but good quality deli-sliced brisket or pre-cooked brisket from your grocery store's hot bar works great too! Saucy & Spicy: Don't be shy with the BBQ sauce! A little extra moisture and flavor go a long way. If you like a kick, add a dash of hot sauce to your BBQ sauce. Customization is Key: Feel free to add coleslaw, jalapeƱos, or different types of cheese to personalize your sandwich. Provolone or a spicy pepper jack are fantastic alternatives.
