Ingredients
  

For the Glazed Carrots
  • 2 lbs carrots peeled and sliced 1/2-inch thick on the diagonal
  • 1/4 cup unsalted butter cut into pieces
  • 1/4 cup light brown sugar packed
  • 1/2 cup water or chicken broth for more flavor
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper freshly ground
  • 1 tbsp fresh thyme leaves or 1 tsp dried thyme
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

Cook the Carrots
  1. In a large skillet or sauté pan with a lid, combine the sliced carrots, pieces of butter, brown sugar, water, kosher salt, and black pepper. Stir gently to distribute the ingredients.
  2. Bring the mixture to a simmer over medium-high heat. Once it begins to bubble, reduce the heat to medium-low, cover the skillet securely with the lid, and cook for 15-20 minutes. The carrots should be tender-crisp when pierced with a fork.
Create the Glaze and Serve
  1. Remove the lid and increase the heat to medium-high. Continue to cook, stirring occasionally, for 5-7 minutes. The liquid will evaporate and thicken into a syrupy glaze that coats the carrots.
  2. Once the glaze has formed, remove the skillet from the heat. Immediately stir in the fresh thyme leaves. Taste the carrots and adjust the seasoning with more salt or pepper if desired.
  3. Transfer the glazed carrots to a serving platter. Garnish with fresh chopped parsley for a vibrant finish and serve warm.

Notes

For a different flavor, you can substitute maple syrup for the brown sugar. A pinch of cinnamon or a squeeze of fresh orange juice at the end can also add a nice touch. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
