Main Ingredients

  • 1 box yellow cake mix (or white, spice, or chocolate cake mix)
  • 3 ripe bananas, mashed (about 1 ½ cups)
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil (or melted butter)

Optional Add-Ins

  • 1 cup chocolate chips optional, for extra sweetness
  • 1 cup chopped nuts (walnuts or pecans) optional, for added crunch
  • 1 tsp cinnamon optional, for extra flavor

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large bowl, mash the bananas until mostly smooth.
  • Add the cake mix, eggs, and oil (or melted butter). Stir until just combined. Do not overmix.
  • Fold in any optional add-ins like chocolate chips, nuts, or cinnamon.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Slice and serve warm or at room temperature. Enjoy!

Notes

For extra moisture, add ¼ cup sour cream or Greek yogurt to the batter. Store leftover banana bread in an airtight container for up to 3 days at room temperature or freeze for up to 3 months.
