  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried oregano
For the Salad
  • 5 oz mixed greens
  • 1 pint cherry or grape tomatoes halved
  • 8 oz fresh mozzarella balls ciliegine or perlini, drained
  • 0.5 cup fresh basil leaves packed, roughly chopped or torn
For the Dressing & Garnish
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic glaze

Method
 

Prepare the Chicken
  1. Pat the chicken breasts dry with paper towels. Season both sides generously with kosher salt, black pepper, and dried oregano.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F). Remove from skillet, tent with foil, and let rest for 5 minutes before slicing into 1/2-inch thick strips.
Assemble the Salad
  1. While the chicken rests, prepare the salad components. Halve the cherry or grape tomatoes and drain the fresh mozzarella balls. Roughly chop or tear your fresh basil leaves.
  2. In a large bowl, gently combine the mixed greens, halved tomatoes, and drained fresh mozzarella balls.
  3. Add the sliced chicken to the bowl with the salad ingredients. Drizzle generously with 2 tablespoons of extra virgin olive oil and 2 tablespoons of balsamic glaze. Toss gently to combine all ingredients.
