Ingredients
  

For the Chicken Filling
  • 1 lbs Boneless, Skinless Chicken Breast cut into 1/2-inch cubes
  • 1 tbsp Olive Oil
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Dried Oregano
  • 1/4 tsp Red Pepper Flakes optional, for a little heat
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste
  • 1/4 cup Marinara Sauce or pizza sauce
For the Garlic Bread
  • 1 loaf Ciabatta Bread or Italian bread, halved lengthwise
  • 4 tbsp Unsalted Butter melted
  • 3 cloves Garlic minced
  • 1 tbsp Fresh Parsley chopped, plus more for garnish
  • 1/4 tsp Salt
For Assembly
  • 1 cup Shredded Mozzarella Cheese
  • 1/4 cup Grated Parmesan Cheese

Method
 

Prepare the Chicken Filling
  1. In a medium bowl, toss the cubed chicken with olive oil, garlic powder, onion powder, oregano, red pepper flakes (if using), salt, and black pepper. Ensure chicken is evenly coated.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
  3. Reduce heat to low, stir in the marinara sauce, and simmer for 2-3 minutes, allowing the flavors to meld. Remove from heat and set aside.
Prepare the Garlic Bread
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil.
  2. In a small bowl, combine the melted butter, minced garlic, chopped parsley, and salt.
  3. Place the halved ciabatta bread on the prepared baking sheet, cut-side up. Generously brush the butter-garlic mixture over both halves of the bread, ensuring full coverage.
Assemble and Bake
  1. Bake the garlic bread in the preheated oven for 5-7 minutes, or until lightly golden and fragrant.
  2. Remove the bread from the oven. Evenly distribute the cooked chicken filling over one half of the garlic bread. Sprinkle the mozzarella cheese and Parmesan cheese generously over the chicken filling.
  3. Place the other half of the garlic bread on top, cut-side down, creating a sandwich.
  4. Return the assembled sandwich to the oven and bake for an additional 8-10 minutes, or until the cheese is completely melted and bubbly, and the bread is golden brown and crispy.
  5. Carefully remove the sandwich from the oven. Let it rest for a minute or two before slicing into individual portions. Garnish with extra fresh parsley if desired. Serve warm.

Notes

For extra flavor, consider adding a slice of provolone cheese on top of the mozzarella before baking. This sandwich is best served immediately to enjoy the crispy garlic bread and melted cheese. Leftovers can be reheated in a toaster oven or air fryer for best results, though the bread may lose some crispness.
