- In a small bowl, whisk together the extra virgin olive oil, lime juice, honey, soy sauce, grated ginger, salt, and black pepper until well combined and emulsified. Taste and adjust seasoning if needed.
Assemble the Salad
- In a large mixing bowl, combine the mixed greens, red cabbage, shredded carrots, red bell pepper, diced cucumber, and green onions.
- Add the slightly cooled crispy air-fried chicken to the bowl with the vegetables.

Notes
For an extra crunch, you can toast the cashews lightly in a dry pan for a few minutes before adding them to the salad. Feel free to add other vegetables like edamame, mandarin oranges, or snow peas for more variety. Leftover dressing can be stored in an airtight container in the refrigerator for up to 3-4 days. Salad is best enjoyed fresh. If you don't have an air fryer, you can bake the chicken at 400°F (200°C) for 15-20 minutes, or pan-fry until cooked through.
