Ingredients
  

For the Filling
  • 2 cups cooked chicken shredded rotisserie or leftover
  • 3 tbsp unsalted butter
  • 1 medium yellow onion diced
  • 1 cup carrots diced small
  • 0.5 cup frozen peas no need to thaw
  • 3 tbsp all-purpose flour
  • 1 cup chicken broth low sodium
  • 0.5 cup whole milk
  • 1 tsp fresh thyme leaves or 1/2 tsp dried
  • salt and black pepper to taste
For the Pastry
  • 1 package frozen puff pastry 17.3 oz, thawed
  • 1 large egg beaten, for egg wash

Method
 

Prep
  1. Preheat oven to 400°F. Lightly grease a 12-cup muffin tin. Unfold thawed puff pastry on a lightly floured surface and gently roll to smooth seams. Cut into 12 squares, about 4 inches each. Press each square into a muffin cup, letting corners hang over the edges.
Make the filling
  1. Melt butter in a large skillet over medium heat. Add onion and carrots and cook until softened, about 6-8 minutes. Stir in frozen peas and cook 1 minute more.
  2. Sprinkle flour over vegetables and cook, stirring constantly, for 1 minute. Gradually whisk in chicken broth and milk. Simmer until thickened, about 3-4 minutes, stirring frequently. The sauce should coat the back of a spoon.
  3. Remove from heat and stir in shredded chicken, thyme, and salt and pepper to taste. Let cool slightly, about 5 minutes - this prevents the pastry from getting soggy.
Assemble and bake
  1. Divide filling evenly among pastry-lined cups, about 1/3 cup each. Fold corners of pastry toward center, overlapping slightly - they will not fully cover the filling. Brush pastry with egg wash.
  2. Bake until pastry is deep golden and puffed, 20-25 minutes. Let cool in tin for 5 minutes, then use a small offset spatula or butter knife to lift out. Serve warm.

Notes

Rotisserie chicken makes this weeknight-fast, but leftover roasted turkey works beautifully too. The filling can be made up to 2 days ahead and refrigerated - just warm slightly before assembling so it spreads easily. For extra-crispy bottoms, bake on a lower oven rack or use a dark nonstick muffin tin.
