Ingredients
  

For the Chicken
  • 1.5 lb boneless skinless chicken breasts cut into 1-inch pieces
  • 0.25 cup all-purpose flour for dredging
  • 0.5 tsp salt plus more for pasta water
  • 0.25 tsp black pepper freshly ground
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter divided
For the Sauce and Pasta
  • 12 oz linguine
  • 6 cloves garlic minced
  • 0.5 cup dry white wine such as Pinot Grigio
  • 0.5 cup chicken broth low sodium
  • 1 lemon zested and juiced (about 2 tbsp juice)
  • 0.25 tsp red pepper flakes optional
  • 0.25 cup fresh parsley chopped
  • 0.25 cup Parmesan cheese finely grated, plus more for serving

Method
 

Prep
  1. Pat chicken pieces dry with paper towels. In a shallow bowl, combine flour, salt, and pepper. Toss chicken in flour mixture until lightly coated, shaking off excess.
Cook the Protein
  1. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add chicken in a single layer and cook undisturbed for 4 minutes until golden brown. Flip and cook 3 minutes more until cooked through. Transfer to a plate.
Make the Sauce
  1. Reduce heat to medium. Add remaining 2 tablespoons butter to the skillet. Once melted, add garlic and cook 30 seconds until fragrant but not browned. Pour in wine and broth, scraping up any browned bits. Simmer 3-4 minutes until slightly reduced. Stir in lemon zest, lemon juice, and red pepper flakes if using.
Cook the Pasta
  1. While sauce simmers, bring a large pot of salted water to a boil. Cook linguine 1 minute less than package directions for al dente. Reserve 1 cup pasta water, then drain.
Assemble
  1. Add pasta to the skillet with sauce, tossing to coat. Add chicken and any accumulated juices. Cook 1-2 minutes, adding reserved pasta water a splash at a time until sauce clings to noodles. Remove from heat and stir in parsley and Parmesan. Serve immediately with extra cheese on the side.

Notes

Don't skip the pasta water - the starch helps emulsify the sauce so it clings to every strand. If you don't have white wine, use extra chicken broth plus a splash of white wine vinegar for brightness. This comes together fast, so have all ingredients prepped before you start cooking.
