Ingredients
  

For the Chicken
  • 1.5 lbs boneless skinless chicken thighs cut into 1-inch pieces
  • 1.5 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 0.5 tsp ground turmeric
  • 1 tsp kosher salt
  • 2 tbsp olive oil divided
For the Rice
  • 1 cup long-grain white rice rinsed until water runs clear
  • 1.5 cups chicken broth
  • 0.5 tsp salt
For the Garlic Sauce (Toum)
  • 4 cloves garlic minced to a paste
  • 0.5 cup mayonnaise
  • 1 tbsp lemon juice freshly squeezed
For Assembly
  • 1 medium cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup fresh parsley chopped
  • 4 pieces warm pita bread optional, for serving

Method
 

Prep and Marinate
  1. In a bowl, toss chicken thighs with cumin, coriander, paprika, turmeric, salt, and 1 tablespoon olive oil until evenly coated. Let sit at room temperature while you prep everything else, or refrigerate up to 4 hours ahead.
Cook the Rice
  1. Combine rinsed rice, chicken broth, and salt in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let steam, covered, for 5 minutes. Fluff with a fork.
Cook the Chicken
  1. Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add chicken in a single layer and cook undisturbed for 4-5 minutes until deeply browned and slightly charred. Flip and cook 3-4 minutes more until cooked through. Work in batches if needed to avoid crowding.
Make the Sauce
  1. In a small bowl, stir together minced garlic, mayonnaise, and lemon juice until smooth. Taste and adjust with more lemon if desired. This shortcut version delivers that classic shawarma shop flavor without the emulsion work.
Assemble the Bowls
  1. Divide rice among four bowls. Top with seared chicken, diced cucumber, and cherry tomatoes. Drizzle generously with garlic sauce and sprinkle with fresh parsley. Serve with warm pita on the side if desired.

Notes

Chicken thighs stay juicier than breast, but either works. Make the garlic sauce up to 3 days ahead; the flavor actually improves. For extra authenticity, add a pinch of cinnamon to the spice mix and finish with a squeeze of pickled turnip if you can find it.
