Chocolate Crepes

Thin, elegant chocolate crepes that work for breakfast, dessert, or any moment that needs a little indulgence.

Ingredients
  

For the Batter
  • 1 cup all-purpose flour spooned and leveled
  • 2 tbsp unsweetened cocoa powder Dutch-process preferred
  • 2 tbsp granulated sugar
  • 0.25 tsp kosher salt
  • 2 large eggs room temperature
  • 1.25 cups whole milk room temperature
  • 2 tbsp unsalted butter melted and cooled, plus more for pan
  • 0.5 tsp pure vanilla extract

  • 10-inch nonstick skillet or crepe pan
  • Blender or whisk
  • Rubber spatula

Method
 

Make the Batter
  1. Combine all batter ingredients in a blender and blend until completely smooth, about 30 seconds. Alternatively, whisk vigorously in a bowl until no lumps remain. The batter should be thin, like heavy cream. Let rest at room temperature for 15 minutes while you heat your pan.
Cook the Crepes
  1. Heat a 10-inch nonstick skillet or crepe pan over medium heat. When hot, brush lightly with melted butter. Test with a small drop of batter - it should sizzle gently and set in about 10 seconds.
  2. Pour 1/4 cup batter into the center of the pan, immediately tilting and swirling to coat the bottom in a thin, even layer. Cook until the edges look dry and slightly curled, about 1 to 1.5 minutes. The surface will appear matte when ready to flip.
  3. Slide a thin spatula under the crepe and flip confidently. Cook the second side for 30 to 45 seconds until set with a few light brown spots. Transfer to a plate and repeat with remaining batter, stacking crepes directly on top of each other - they will not stick.

Notes

The batter can be made up to 24 hours ahead and refrigerated; whisk briefly before using as it may separate. For the best texture, do not stack crepes until fully cooled if making ahead. These are excellent filled with whipped cream and fresh berries, Nutella and sliced bananas, or simply folded with a dusting of powdered sugar.
