Prepare the Yogurt Bites
- Line a mini muffin pan with 24 mini paper liners. Set aside.
- In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined and smooth.
- Gently fold in the finely diced fresh strawberries.
- Spoon the yogurt mixture evenly into the prepared mini muffin liners, filling each about 3/4 full.
- Place the muffin pan in the freezer for at least 2 hours, or until the yogurt bites are completely firm.
- Once frozen, carefully remove the yogurt bites from the muffin pan and peel off the paper liners. Place them on a parchment-lined baking sheet.
Prepare the Chocolate Coating
- In a microwave-safe small bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth. Be careful not to overheat.
Coat and Chill
- Dip the bottom of each frozen yogurt bite into the melted chocolate, or drizzle the chocolate over the top using a spoon or fork. For a full coating, you can quickly dip the entire bite and place it back on the parchment-lined baking sheet.
- If desired, sprinkle with crushed freeze-dried strawberries while the dark chocolate is still wet.
- Return the baking sheet with the chocolate-coated bites to the freezer for another 15-20 minutes, or until the chocolate has fully set.
Serve and Store
- Remove from the freezer a few minutes before serving to allow them to slightly soften. Enjoy immediately.
Notes
Storage: Store leftover Chocolate Strawberry Yogurt Bites in an airtight container in the freezer for up to 2-3 weeks.
