Ingredients
  

For the Salad
  • 2 cans black beans 15-ounce, drained and rinsed
  • 1 can whole kernel corn 15-ounce, drained
  • 1 red bell pepper diced
  • 0.5 red onion small, finely diced
  • 0.5 cup fresh cilantro chopped
For the Dressing
  • 0.25 cup lime juice freshly squeezed (from 2-3 limes)
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground, or to taste

Method
 

  1. First things first, drain and rinse your black beans thoroughly under cold water. Do the same for your canned corn, making sure to shake off any excess liquid. Transfer both to a large mixing bowl. Now, finely dice your red bell pepper and half of a small red onion. Add these colorful veggies to the bowl along with your freshly chopped cilantro.
  2. In a separate small bowl or a liquid measuring cup, it's time to make that zesty dressing! Whisk together the freshly squeezed lime juice, good quality olive oil, minced garlic, ground cumin, salt, and freshly ground black pepper until everything is well combined and looks emulsified.
  3. Pour the vibrant dressing you just made directly over the bean and vegetable mixture in the large bowl. Get ready for some flavor magic!
  4. Gently, but thoroughly, toss all the ingredients together using a large spoon or spatula. Make sure every bean and piece of vegetable gets a nice coating of that delicious cilantro-lime dressing. You want all those flavors to mingle!
  5. For the best results, cover your bowl and pop the salad into the refrigerator to chill for at least 30 minutes. An hour or even more is fantastic, as it really allows those flavors to meld and deepen, making the salad even more delicious.
