Ingredients
  

For the Biscuit Bites
  • 16.3 oz refrigerated biscuit dough 1 can (8 count), like Pillsbury Grands
  • 4 tbsp unsalted butter melted
  • 0.5 cup granulated sugar
  • 1 tbsp ground cinnamon
  • 0.5 tsp pure vanilla extract optional but recommended
  • 1 pinch of fine sea salt

Method
 

Prep
  1. Preheat oven to 375°F. Line a large rimmed baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Open the biscuit can and separate the 8 biscuits. Cut each biscuit into 6 equal pieces (cut in half, then cut each half into thirds). You will have 48 bite-sized pieces total. Scatter them on the prepared baking sheet so they are not touching.
  3. Bake for 12 to 14 minutes, until the biscuit pieces are puffed and deep golden brown on top. They should sound hollow when tapped. Remove from oven and let cool for 2 minutes on the pan.
Make cinnamon sugar coating
  1. While the biscuits bake, whisk together the granulated sugar, cinnamon, and salt in a large mixing bowl until well combined.
  2. Transfer the warm biscuit bites to the bowl with the cinnamon sugar. Drizzle the melted butter and vanilla over the top. Toss vigorously with a spatula or your hands until every piece is coated in the glossy cinnamon sugar mixture. The warmth of the biscuits helps the sugar adhere and creates that signature crackly coating.
  3. Transfer to a serving plate and serve immediately while the centers are still soft and the exterior is crisp.

Notes

For extra crunch, bake the biscuit pieces on a wire rack set inside your baking sheet so hot air circulates underneath. These are best eaten within an hour of making while the exterior stays crisp. To make ahead, bake and cool the biscuit bites completely, then reheat in a 350°F oven for 5 minutes before tossing with fresh butter and cinnamon sugar.
