Ingredients
  

For the Chocolate Ganache
  • 1 cup heavy cream full-fat, at room temperature
  • 8 oz dark chocolate finely chopped
  • 2 tbsp unsalted butter softened
For the Coating
  • 1/4 cup cocoa powder for dusting

Method
 

Prepare the Ganache
  1. In a mixing bowl, place the finely chopped dark chocolate.
  2. In a small saucepan, heat the heavy cream until it just begins to simmer, then pour it over the chocolate.
  3. Add the softened butter and let the mixture sit for 5 minutes allowing the chocolate to melt.
  4. Stir the mixture gently in circular motions until smooth and shiny.
Chill the Mixture
  1. Cover the bowl with plastic wrap and refrigerate for about 30 minutes, until firm enough to handle.
Shape the Truffles
  1. Using a spoon, scoop small amounts of the ganache and roll between your palms to form 1-inch balls.
  2. Place the formed balls on a baking sheet lined with parchment paper.
Coat the Truffles
  1. Roll each ball in cocoa powder to coat evenly.
Serving and Storage
  1. Transfer the truffles to an airtight container and store them in the refrigerator.

Notes

For a variety of flavors, try adding a splash of your favorite liqueur to the ganache. Truffles can be stored in the refrigerator for up to two weeks.
