Prepare the Lobster
- If using live lobster: Bring a large pot of salted water to a rolling boil. Plunge lobsters headfirst into the boiling water. Cook for 8-10 minutes for a 1.5 lb lobster. Immediately transfer to an ice bath to stop cooking. Once cooled, crack and remove all meat from tails, claws, and knuckles. Cut the meat into 1/2-inch pieces.
- If using pre-cooked or frozen lobster: Ensure it is thawed and chilled. Cut the lobster meat into 1/2-inch pieces.
- Gently pat the lobster meat dry with paper towels to remove excess moisture.
Make the Dressing
- In a medium mixing bowl, combine the mayonnaise, fresh lemon juice, finely diced celery, chopped chives, sea salt, and freshly ground black pepper. Stir well until all ingredients are thoroughly mixed.
Combine and Chill
- Add the prepared lobster meat to the dressing mixture. Gently fold the lobster meat into the dressing until it is evenly coated. Be careful not to mash the lobster.
- Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld and for the mixture to chill thoroughly.
Prepare and Toast Buns
- Melt the unsalted butter in a small microwave-safe bowl or saucepan.
- Brush the outside flat sides of each New England style split-top hot dog bun generously with the melted butter.
- Heat a large skillet or griddle over medium-low heat. Place the buttered sides of the buns down on the hot surface. Toast for 2-3 minutes per side, or until golden brown and crispy.
Assemble the Lobster Rolls
- Carefully open each toasted bun.
- Generously fill each bun with the chilled lobster salad mixture.
- Serve immediately, perhaps with a side of potato chips or coleslaw.
Notes
For the best flavor, use fresh, high-quality lobster. While live lobster yields the freshest taste, good quality frozen cooked lobster meat can also be used. Ensure it's fully thawed and chilled. Don't overdress the lobster; the goal is to enhance its natural sweetness, not mask it. For a 'hot' lobster roll variation, gently warm the cooked lobster meat in melted butter before filling the toasted buns, omitting the mayonnaise dressing.
