Prepare the Mixture
- Line a baking sheet with parchment paper and set it aside. In a large mixing bowl, combine all the dry ingredients for the balls: the vanilla wafer crumbs, 1 cup of sweetened shredded coconut, finely chopped pecans, confectioners' sugar, and unsweetened cocoa powder. Stir well to combine.
- In a separate small bowl, whisk together the melted butter, dark rum, and light corn syrup until smooth.
- Pour the wet ingredients into the bowl with the dry ingredients. Mix with a spatula or your hands until a thick, sticky dough forms and all ingredients are evenly incorporated.
Form and Chill the Balls
- In a shallow dish or on a plate, combine the 1/2 cup of shredded coconut and the chocolate sprinkles for the coating. Mix them together.
- Scoop about 1 tablespoon of the mixture and roll it between your palms to form a smooth, 1-inch ball.
- Immediately roll the ball in the coconut-sprinkle mixture until it is fully coated. Place the finished ball on the prepared parchment-lined baking sheet.
- Repeat the process until all the mixture is used. You should have about 36 balls.
- Place the baking sheet in the refrigerator and chill for at least 30 minutes to allow the moose farts to firm up before serving.
