For the Graham Cracker Crust
- Preheat oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the crumbs are moistened.
- Press the mixture evenly into the bottom of a 9-inch springform pan. You can use the bottom of a glass or your fingers to compact it.

For the Cheesecake Filling
- In a large mixing bowl, using an electric mixer on medium-low speed, beat the softened cream cheese until smooth and creamy, about 2-3 minutes. Scrape down the sides of the bowl.
- Gradually add the granulated sugar, flour, vanilla extract, and salt. Beat on low speed until just combined, being careful not to overmix. Overmixing can incorporate too much air, leading to cracks.
- Stir in the sour cream until fully incorporated.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
For the Strawberry Topping
- In a small saucepan, combine the quartered strawberries, granulated sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally, until the strawberries start to break down and release their juices, about 5-7 minutes.
- In a small bowl, whisk together the cornstarch and water until smooth. Pour the cornstarch slurry into the simmering strawberry mixture, stirring constantly.
- Continue to cook and stir for 1-2 minutes until the sauce thickens. Remove from heat and let cool slightly. Mash some of the strawberries with a fork if you prefer a smoother sauce with fewer chunks.
- Once cooled, reserve about 1/2 cup of the topping for later garnish.
Assembling and Baking the Cheesecake
- Pour about two-thirds of the cheesecake filling over the cooled crust in the springform pan.
- Dollop spoonfuls of the strawberry topping (from the main batch, not the reserved garnish) over the filling. Using a knife or a skewer, gently swirl the strawberry topping into the cheesecake mixture.
- Carefully pour the remaining cheesecake filling over the swirled layer, smoothing the top. You can add a few more small dollops of strawberry topping and swirl again if desired.
- Place the foil-wrapped springform pan into a larger roasting pan. Carefully pour hot water into the roasting pan, ensuring it comes about halfway up the sides of the springform pan. This creates a water bath, which helps the cheesecake bake evenly and prevents cracks.
- Carefully transfer the roasting pan with the cheesecake to the preheated oven. Bake for 60-70 minutes, or until the edges are set and the center still has a slight jiggle when gently shaken.
- Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour. This slow cooling helps prevent cracking.
- Remove the cheesecake from the water bath and the roasting pan. Carefully remove the foil. Let it cool completely on a wire rack at room temperature for another 1-2 hours.
Chilling and Finishing
- Once completely cooled, cover the cheesecake loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight. This is crucial for the cheesecake to firm up and develop its full flavor.
- Before serving, carefully run a thin knife around the edge of the pan before releasing the springform sides.
- Top with the reserved strawberry topping and fresh strawberry slices if desired.
