- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with parchment paper leaving an overhang on the long sides.
- In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt. Set aside.
- In a separate medium bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. Beat in the eggs one at a time, then stir in the vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir with a rubber spatula until just combined. Be careful not to overmix; a few lumps are fine.
- Gently fold in the grated zucchini and chopped walnuts until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and spread evenly. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean. If the top starts to brown too quickly, you can tent it loosely with aluminum foil.
- Once baked, remove the loaf from the oven and let it cool in the pan for 10-15 minutes.
- Invert the loaf onto a wire rack to cool completely before slicing and serving.
Notes
To squeeze out excess moisture from the zucchini, place the grated zucchini in a clean kitchen towel or paper towels and wring it out until no more water comes out. This prevents a soggy bread. This bread tastes even better the next day! Store leftover bread tightly wrapped in plastic wrap at room temperature for up to 3 days, or in the refrigerator for up to 5 days. For longer storage, slice and freeze for up to 3 months.
