  • 1 cup full-fat coconut milk canned, unsweetened, chilled for best results
  • 1/2 cup plain Greek yogurt or dairy-free coconut yogurt
  • 1/4 cup key lime juice freshly squeezed for best flavor
  • 1 tsp lime zest from about 1 medium lime
  • 2 tbsp honey or maple syrup, adjust to taste
  • 1/2 tsp vanilla extract
  • 1 cup ice cubes
Optional Garnishes
  • 1 tbsp graham cracker crumbs
  • 1 dollop whipped cream or coconut whipped cream

Method
 

Combine Ingredients
  1. Add all smoothie ingredients (coconut milk, Greek yogurt, key lime juice, lime zest, honey or maple syrup, vanilla extract, and ice cubes) into a high-speed blender.
Blend Until Smooth
  1. Secure the lid and blend on high until completely smooth and creamy. If the smoothie is too thick, add a splash more coconut milk; if too thin, add a few more ice cubes and blend again.
Serve and Garnish
  1. Pour the smoothie into two glasses. Garnish with a sprinkle of graham cracker crumbs and a dollop of whipped cream or coconut whipped cream, if desired.

Notes

For an extra boost of nutrition, consider adding a handful of spinach (you won't taste it!) or a scoop of collagen powder. To make it more substantial, add half a frozen banana before blending.
