Ingredients
  

Dry Ingredients
  • 2.25 cups all-purpose flour spooned and leveled
  • 2 tbsp instant espresso powder not ground coffee
  • 1 tsp baking soda
  • 1 tsp fine sea salt
Wet Ingredients
  • 1 cup unsalted butter 2 sticks, room temperature
  • 1 cup light brown sugar packed
  • 0.5 cup granulated sugar
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 2 tsp vanilla extract
Mix-Ins
  • 8 oz semisweet chocolate chunks coarsely chopped

Method
 

Prep
  1. Position racks in upper and lower thirds of oven. Preheat to 350°F. Line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, espresso powder, baking soda, and salt until the espresso is evenly distributed and no dark streaks remain.
Make the Dough
  1. In a large bowl with a mixer, beat butter, brown sugar, and granulated sugar on medium-high speed until light and fluffy, about 3 minutes. Scrape down bowl once or twice.
  2. Beat in whole egg, egg yolk, and vanilla until fully incorporated, about 1 minute. The mixture should look smooth and slightly lighter in color.
  3. With mixer on low, gradually add flour mixture and beat just until no dry spots remain. Do not overmix.
  4. Using a wooden spoon or rubber spatula, fold in chocolate chunks until evenly distributed. The dough will be thick and slightly sticky.
Shape and Bake
  1. Scoop dough into 2-tablespoon balls (about 1.5 inches) and place 2 inches apart on prepared sheets. If dough is very soft, chill 10 minutes before baking.
  2. Bake until edges are set and golden brown but centers still look slightly underdone, 11 to 13 minutes, rotating sheets halfway through. They will firm up as they cool.
  3. Let cookies cool on sheets 5 minutes, then transfer to wire racks to cool completely. The espresso flavor intensifies as they rest.

Notes

For stronger coffee flavor, increase espresso powder to 3 tablespoons or add 1 teaspoon coffee extract with the vanilla. The extra yolk creates that bakery-style chewy center - do not skip it. Dough can be refrigerated up to 3 days or frozen up to 2 months; bake frozen dough 2 minutes longer.
