  • 1 cup cottage cheese blended until smooth
  • 2 eggs large
  • 1/2 cup sugar or sweetener of choice

  • 1/2 cup cocoa powder unsweetened
  • 1/2 cup flour all-purpose or whole wheat
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Optional Add-ins
  • 1/4 cup chocolate chips dark or semi-sweet
  • 1/4 cup chopped nuts walnuts or almonds

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8x8 baking pan.
  2. In a mixing bowl, blend cottage cheese, eggs, and sugar until smooth.
  3. Stir in cocoa powder, flour, baking powder, and salt until combined.
  4. Fold in chocolate chips or nuts if using.
  5. Pour batter into prepared baking pan and smooth the top.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let cool before slicing into squares and serving.

Notes

For a lower-sugar version, use a natural sweetener like honey or maple syrup. These brownies taste best when slightly fudgy—avoid overbaking!
