Ingredients
  

  • 2 lbs Chicken Breasts boneless, skinless, cut into bite-sized pieces
  • 2 tbsp Cajun Seasoning homemade or store-bought
  • 1 lb Penne Pasta uncooked
  • 1 cup Heavy Cream room temperature
  • 1/2 cup Chicken Broth low sodium
  • 1 cup Parmesan Cheese freshly grated
  • 1 whole Red Bell Pepper diced
  • 1 whole Green Bell Pepper diced
  • 3 cloves Garlic minced
  • 2 tbsp Olive Oil extra virgin
  • 2 tbsp Butter unsalted

Method
 

Prepare Chicken
  1. Season chicken pieces thoroughly with Cajun seasoning, ensuring even coating.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
Cook Vegetables
  1. In the same skillet, add butter and sauté diced bell peppers and minced garlic for 3-4 minutes until slightly softened.
Prepare Pasta and Sauce
  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. Add chicken broth and heavy cream to the skillet, stirring to combine. Bring to a gentle simmer.
  3. Stir in grated Parmesan cheese until the sauce is smooth and creamy.
Combine and Serve
  1. Return cooked chicken to the skillet, then add drained pasta. Toss everything together until well combined and heated through.
  2. Serve hot, garnished with additional Parmesan cheese and chopped parsley if desired.

Notes

For extra heat, add a pinch of red pepper flakes. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to prevent sauce from separating.
