Creamy Chicken Gnocchi Soup

A rich and creamy soup packed with tender chicken, pillowy potato gnocchi, and fresh spinach. This one-pot meal is the ultimate comfort food, even better than the restaurant version!

Ingredients
  

Soup Base
  • 1 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 medium Yellow onion diced
  • 2 medium Carrots finely diced
  • 2 stalks Celery finely diced
  • 4 cloves Garlic minced
  • 1/4 cup All-purpose flour
  • 6 cups Low-sodium chicken broth
  • 2 cups Half-and-half
  • 1 tsp Dried thyme
  • 1 Bay leaf
  • Salt and freshly ground black pepper to taste
Main Components
  • 1 lb Boneless, skinless chicken breasts
  • 1 (16-ounce) package Potato gnocchi
  • 5 oz Fresh baby spinach
For Garnish (Optional)
  • Grated Parmesan cheese for serving

Method
 

Sauté Aromatics & Cook Chicken
  1. In a large Dutch oven or stockpot, heat the olive oil and butter over medium heat. Add the diced onion, carrots, and celery (the mirepoix). Cook, stirring occasionally, until softened, about 6-8 minutes.
  2. Add the minced garlic and dried thyme. Cook for another minute until fragrant, being careful not to burn the garlic.
  3. Sprinkle the all-purpose flour over the vegetables and stir continuously for 1 minute to cook out the raw flour taste. This will create a roux to thicken the soup.
  4. Slowly whisk in the chicken broth, a little at a time, to avoid lumps. Once all the broth is incorporated, add the bay leaf. Bring the mixture to a gentle simmer.
  5. Carefully place the whole chicken breasts into the simmering broth. Reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the chicken is cooked through and no longer pink inside.
Finish the Soup
  1. Once cooked, remove the chicken breasts from the pot and set them on a cutting board. Use two forks to shred the chicken.
  2. While the chicken is out of the pot, pour in the half-and-half and stir to combine. Bring the soup back to a gentle simmer over medium-low heat. Do not let it boil.
  3. Add the potato gnocchi to the soup. Cook according to package directions, typically for 3-4 minutes, or until they float to the surface.
  4. Stir the shredded chicken back into the soup. Add the fresh spinach by the handful, stirring until it has wilted completely, which should only take about 1-2 minutes.
  5. Remove the bay leaf. Taste the soup and season generously with salt and freshly ground black pepper as needed.
  6. Ladle the hot soup into bowls. Garnish with grated Parmesan cheese if desired and serve immediately.

Notes

For a thicker soup, you can create a slurry with 1 tablespoon of cornstarch and 2 tablespoons of cold water and stir it in during step 7. For a time-saving shortcut, use 2-3 cups of pre-cooked rotisserie chicken, shredded, and add it in step 9. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The gnocchi will continue to absorb liquid and may become softer.
