Creamy Coconut Curry Chicken

A rich and flavorful curry chicken made with tender chicken thighs, creamy coconut milk, and a fragrant blend of spices. This easy weeknight meal comes together in under an hour and is perfect served over fluffy basmati rice.

Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1/2 tsp turmeric powder
For the Curry Sauce
  • 2 tbsp coconut oil or vegetable oil
  • 1 medium yellow onion finely chopped
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp curry powder medium heat
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper optional, for more heat
  • 1 can (13.5 oz) full-fat coconut milk shaken well
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1/2 cup chicken broth low sodium
  • 1 tsp brown sugar or coconut sugar, to taste
  • 1 tbsp fresh lime juice
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Prepare and Season the Chicken
  1. Pat the chicken thighs dry with a paper towel and cut them into bite-sized, 1-inch pieces. In a medium bowl, toss the chicken pieces with the salt, black pepper, and turmeric powder until evenly coated. Set aside.
Sauté Aromatics and Spices
  1. Heat the coconut oil in a large skillet or Dutch oven over medium-high heat. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 5-6 minutes.
  2. Add the minced garlic and grated ginger to the skillet. Cook for about 1 minute until fragrant, stirring constantly to prevent burning.
  3. Stir in the curry powder, ground cumin, ground coriander, and cayenne pepper (if using). Toast the spices for 30-60 seconds, stirring continuously, until they become very fragrant. This step is key to developing a deep flavor.
Cook Chicken and Build the Sauce
  1. Add the seasoned chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is lightly browned on all sides. It does not need to be cooked through at this point.
  2. Pour in the coconut milk, undrained diced tomatoes, and chicken broth. Stir everything together, scraping up any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer.
Simmer and Finish
  1. Once simmering, reduce the heat to low, cover the skillet, and let the curry cook for 15-20 minutes, or until the chicken is cooked through and tender, and the sauce has thickened slightly.
  2. Remove the curry from the heat. Stir in the brown sugar and fresh lime juice. Taste and adjust seasoning if necessary, adding more salt, sugar, or lime juice as needed.
  3. Garnish generously with fresh cilantro and serve hot over basmati rice or with naan bread.

Notes

For a thicker sauce, simmer uncovered for the last 5-10 minutes of cooking. Store leftovers in an airtight container in the refrigerator for up to 4 days; the flavors will meld and become even more delicious. Feel free to add vegetables like spinach, bell peppers, or peas during the last 10 minutes of simmering.
