Ingredients
  

For the Mango Puree
  • 2 cups fresh mango puree from 3-4 large, ripe mangoes (e.g., Ataulfo or Honey variety)
For the Ice Cream Base
  • 1 can full-fat coconut milk 13.5 oz / 400ml
  • 1 cup heavy cream cold
  • 1/2 cup granulated sugar or more, to taste depending on mango sweetness
  • 1 tbsp fresh lime juice freshly squeezed
  • 1 tsp vanilla extract pure vanilla
  • pinch salt fine sea salt

Method
 

Prepare the Mango Puree
  1. Peel and dice the mangoes, discarding the pits. Place the diced mango into a blender or food processor. Blend until smooth and completely pureed. Measure out 2 cups of the puree. Set aside.
Make the Ice Cream Base
  1. In a medium saucepan over medium heat, combine the full-fat coconut milk, heavy cream, granulated sugar, lime juice, vanilla extract, and a pinch of salt. Whisk continuously until the sugar is fully dissolved (about 3-5 minutes). Do not boil the mixture.
  2. Remove the saucepan from the heat. Let the mixture cool down to room temperature, then cover and refrigerate for at least 4 hours, or preferably overnight, until thoroughly chilled. This step is crucial for achieving the best creamy texture.
Combine and Churn
  1. Once the cream base is thoroughly chilled, combine it with the 2 cups of fresh mango puree in a large mixing bowl. Whisk until well combined and smooth.
  2. Pour the chilled mango and coconut mixture into your ice cream maker's freezer bowl (which should be frozen solid according to the manufacturer's instructions). Churn according to your ice cream maker's directions, usually for 20-25 minutes, until it reaches a soft-serve consistency.
Freeze to Firm
  1. Transfer the soft ice cream to an airtight freezer-safe container (a loaf pan works well). Press a piece of parchment paper or plastic wrap directly onto the surface of the ice cream to prevent ice crystals from forming. Freeze for at least 4-6 hours, or until firm, before serving.

Notes

For the best flavor and texture, use very ripe, sweet mangoes. Ataulfo or Honey mangoes are excellent choices for their sweetness and low fiber content. If your mangoes are not very sweet, you may wish to add an extra tablespoon or two of sugar to the ice cream base. Store leftover ice cream in an airtight container in the freezer for up to 2 weeks. If it becomes too hard, let it soften on the counter for 5-10 minutes before scooping.
