Creamy No-Mayo Avocado Egg Salad

A fresh and healthy twist on classic egg salad, this recipe uses creamy avocado and tangy Greek yogurt instead of mayonnaise for a lighter, nutrient-packed dish. Perfect for sandwiches, wraps, or as a side.

Ingredients
  

  • 6 large eggs
  • 2 ripe avocados pitted and peeled
  • 1/4 cup plain Greek yogurt full-fat recommended for creaminess
  • 2 tbsp red onion finely chopped
  • 1 tbsp fresh dill chopped
  • 1 tbsp fresh chives chopped
  • 1 tbsp fresh lemon juice
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt or to taste
  • 1/8 tsp black pepper freshly ground

Method
 

  1. Place eggs in a saucepan and cover with cold water by about one inch. Bring to a rolling boil over high heat. Once boiling, immediately turn off the heat, cover the pot, and let the eggs stand for 10-12 minutes for perfect hard-boiled eggs.
  2. While the eggs are cooking, prepare an ice bath. Once the 10-12 minutes are up, use a slotted spoon to transfer the eggs to the ice bath to stop the cooking process. Let them cool completely for at least 5-10 minutes before peeling.
  3. While the eggs cool, prepare the avocado base. Slice the avocados in half, remove the pits, and scoop the flesh into a large mixing bowl. Immediately add the fresh lemon juice to prevent browning. Mash the avocado with a fork to your desired consistency – leave it slightly chunky for more texture.
  4. To the mashed avocado, add the Greek yogurt, finely chopped red onion, fresh dill, fresh chives, Dijon mustard, salt, and black pepper. Stir until everything is well combined.
  5. Once cool, peel and roughly chop the hard-boiled eggs. Add the chopped eggs to the avocado mixture in the bowl.
  6. Gently fold the chopped eggs into the avocado dressing until just combined. Be careful not to overmix, as it can make the salad mushy and turn it overly green. Taste and adjust seasoning with more salt or pepper if needed.
  7. Serve immediately on sandwiches, in lettuce wraps, with crackers, or as a side dish. Garnish with an extra sprinkle of chives or paprika if desired.

Notes

Avocado Ripeness: Use avocados that are ripe but still slightly firm. Overly soft or stringy avocados can negatively affect the texture of the salad.
Serving Suggestions: This salad is excellent on toasted whole-grain bread, in crisp lettuce wraps for a low-carb option, or served on a bed of spinach and arugula.
Storage: This egg avocado salad is best enjoyed fresh. To store leftovers, press a piece of plastic wrap directly onto the surface of the salad to minimize air contact and refrigerate for up to 24 hours. The lemon juice helps, but some browning is natural.
