Cook Pasta and Chicken
- Bring a large pot of salted water to a boil. Cook the penne pasta according to package directions until al dente. Just before draining, reserve about 1 cup of the starchy pasta water, then drain the pasta.
- While the pasta is cooking, pat the chicken breast cubes dry with a paper towel. In a small bowl, toss the chicken with Italian seasoning, garlic powder, salt, and black pepper until evenly coated.
- Heat the olive oil in a large skillet or pan over medium-high heat. Add the seasoned chicken cubes in a single layer and cook for 5-7 minutes, turning occasionally, until golden brown on all sides and cooked through. Remove the chicken from the skillet and set aside on a plate.
Make the Creamy Parmesan Sauce
- Reduce the heat to medium. In the same skillet, melt the butter. Add the minced garlic and cook for about 30-60 seconds until fragrant, being careful not to burn it.
- Pour in the chicken broth and heavy cream. Bring the mixture to a gentle simmer, whisking occasionally. Let it simmer for 3-4 minutes, allowing the sauce to thicken slightly.
- Reduce the heat to low. Gradually whisk in the 1 cup of freshly grated Parmesan cheese until it has completely melted and the sauce is smooth. Stir in the chopped fresh parsley and season with additional salt and pepper to taste.
Combine and Serve
- Add the cooked chicken and drained pasta back into the skillet with the sauce. Toss everything together until the chicken and pasta are well-coated in the creamy sauce.
- If the sauce seems too thick, stir in a splash of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
- Serve immediately, garnished with a generous sprinkle of extra Parmesan cheese and more fresh parsley.
