Creamy Pickle Rolls

Ingredients
  

For the Cream Cheese Spread
  • 8 oz cream cheese full-fat, softened
  • 1 tsp Worcestershire sauce
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper freshly ground
  • 2 tbsp fresh chives finely chopped
For Assembly
  • 4 oz dried beef thinly sliced
  • 8-10 dill pickle spears well-drained and patted dry

Method
 

Prepare the Pickles and Cream Cheese
  1. Thoroughly drain your dill pickle spears and pat them very dry with paper towels. This step is crucial to prevent your rolls from becoming watery, so don't skip it!
  2. In a medium mixing bowl, combine the softened cream cheese, Worcestershire sauce, garlic powder, freshly ground black pepper, and finely chopped chives. Stir everything together until the mixture is completely smooth and all ingredients are evenly incorporated.
Assemble the Rolls
  1. Carefully lay slices of dried beef flat on a clean surface or cutting board. If your dried beef slices are on the smaller side, you can slightly overlap two pieces to create a larger rectangle, which makes rolling easier for longer pickle spears.
  2. Generously spread a layer of the seasoned cream cheese mixture evenly over each slice (or overlapped slices) of dried beef, making sure to extend the spread almost to the edges.
  3. Place one drained and dried pickle spear at one end of the cream cheese-covered dried beef. Starting from the end with the pickle, carefully and tightly roll the dried beef around the spear. The cream cheese will help seal the roll as you go.
Chill and Serve
  1. Once all the rolls are assembled, place them seam-side down on a plate or platter. Cover tightly with plastic wrap and refrigerate for at least 30 minutes (or up to 2 hours) to allow them to firm up. This chilling time also gives the flavors a chance to meld beautifully.
  2. When ready to serve, use a sharp knife to slice each chilled roll into 0.5-inch to 1-inch thick rounds. Arrange them artfully on a serving platter and get ready for compliments!

Make Ahead Magic: These rolls are fantastic for making ahead! Prepare them up to 24 hours in advance and store them covered in the refrigerator. Slice just before serving for the freshest look and texture. Pickle Power: Don't skimp on draining and patting your pickles dry. Excess moisture can make your rolls soggy, which nobody wants! You can use whole dill pickles sliced lengthwise into spears, or store-bought spears. Flavor Swap: Feel free to experiment with the cream cheese spread! A tiny pinch of cayenne pepper for a kick, a dash of onion powder, or even a different fresh herb like parsley or more dill would be delicious. If you're not a fan of dried beef, thinly sliced deli ham or turkey can work in a pinch.
