Creamy Potato Salad With Pickles

Ingredients
  

For the Potatoes
  • 2 lb Yukon Gold potatoes scrubbed, cut into 3/4-inch cubes
  • 1 tbsp kosher salt for boiling water
For the Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp Dijon mustard
  • 2 tbsp pickle brine from the jar
  • 0.5 tsp freshly ground black pepper
For the Mix-ins
  • 0.75 cup dill pickles diced, about 2 medium
  • 2 stalks celery diced small
  • 0.25 cup red onion finely diced
  • 2 tbsp fresh dill chopped, plus more for garnish

Method
 

Cook the Potatoes
  1. Place cubed potatoes in a large pot and cover with cold water by 2 inches. Add 1 tablespoon kosher salt. Bring to a boil over high heat, then reduce to a gentle simmer. Cook until potatoes are tender when pierced with a fork, 12 to 15 minutes. Do not overcook - they should hold their shape.
  2. Drain potatoes in a colander and spread on a baking sheet in a single layer. Let cool to room temperature, about 30 minutes. This prevents the dressing from breaking and keeps the potatoes firm.
Make the Dressing
  1. In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, pickle brine, and black pepper until smooth. The brine adds tang and thins the dressing just enough to coat evenly.
Assemble the Salad
  1. Transfer cooled potatoes to a large mixing bowl. Add diced pickles, celery, red onion, and chopped dill. Pour dressing over the top and fold gently with a rubber spatula until everything is evenly coated. Taste and adjust salt if needed - the pickles and brine already add saltiness.
  2. Cover and refrigerate for at least 1 hour, preferably 2 to 4 hours, to let flavors meld. Garnish with additional fresh dill just before serving.

Notes

For the best texture, use waxy potatoes like Yukon Gold or red potatoes - russets will fall apart. The salad keeps well for up to 3 days refrigerated; if it seems dry after chilling, stir in a tablespoon of pickle brine to revive it. For extra crunch, reserve a few tablespoons of diced pickle to sprinkle on top just before serving.
